Mrs. Elizabeth Kate Grubb age 49 of Barbourville, departed this life on Tuesday, August 22, 2023 in the UK Medical Center in Lexington. She was the wife of Paul Grubb and the daughter of Loretta Stewart and David Roark. She was a member of the East Barbourville Baptist Church and was a retired teacher from Knox County Middle School. Liz enjoyed family gatherings and spending time with her husband and her children who were her world. She loved to travel and go on cruises and family game nights, but especially loved cheering her son Dallas and his team mates on during their sporting events.
She is preceded in death by her angel babies, her brother Jonathan Roark, her maternal grandfather, Ted Stewart and paternal grandparents, Kenneth and Geneva Jackson.
Left behind to mourn her passing, her husband Paul Grubb, her mother, Loretta Stewart and husband Tony Oppegard, her father David Roark, five children, Cassidy Elizabeth West, Lindsey Dean West, Dallas Ryan Merida, Paula Tye and husband Tyler and Collin Grubb and wife Blair, one granddaughter, Ellary Kaye Tye, a nephew, Cameron Easton Roark, her grandmother, Ada Stewart and her mother and father-in-law, Bo and Juanita Grubb. She also leaves behind many beloved aunts, uncles, cousins and other family and friends that are too numerous to mention individually. She had many, many friends and was loved by everyone.
Funeral services for Elizabeth will be conducted in the East Barbourville Baptist Church on Saturday, August 26, 2023, at 2:00 p.m. with Rev. James Vandy and Rev. Sylvester Dunn officiating. She will be laid to rest in the Barbourville Cemetery. Pallbearers will be Collin Grubb, Adam Schilt-Solberg, Jacob Knuckles, Jaxon Knuckles, Lucas Stewart, Mark Roark, Brady Worley, Dane Imel and Alec Merida. Honorary pallbearers are Chad Merida and Clint Mays. Hampton Funeral Home will be in charge of arrangements.
Friends will be received at the church on Friday evening after 6:00 p.m. and on Saturday from 12:00 noon until the hour of service at 2:00 p.m.
