Ms. Betty Lee Jackson, of Corbin, passed away peacefully Tuesday evening, February 7, 2023, after spending the day surrounded by her loved ones.
Betty, age 88, was born on June 19, 1934, to her parents, Ernest and Edna Jackson, at Swan Lake.
She was preceded in death by her parents, Ernest and Edna Jackson; her sister and brother-in-law, Reda and Robert Jarrett; her brothers, William Jackson and wife, Lavena, and Glen Jackson; her brother-in-law, J. W. Sandefer, and her niece, Beth Jackson.
Betty grew up in Barbourville, where she graduated from Knox Central High School before moving to Ohio to begin her career working at Ma Bell. After living in Ohio, Betty moved to the Houston, Texas area to be close to her sister. She lived in Texas until 2019, where she held a long career at Ma Bell, known today as AT&T, from which she retired. While living in Texas, Betty was a beloved sister, aunt, avid Houston Astros fan, and a faithful member of Cornerstone Baptist Church, The Woodlands of Texas.
Betty exemplified what it means to be a virtuous woman through her steadfast faith, integrity, strength, and dedication to her family, and she has always been known for her fierce independence, sharp mind, and unbeatable work ethic, all of which have left a deep and lasting impression on her family. Betty’s gift to her friends and family was the example she set through living a life of conviction and love, showing each one of us how precious time given, and a simple act of kindness can be.
Some of her family’s most cherished memories of Aunt Betty include her sweet tooth, which helped her to create the most decadent fudge at Christmas, her love of flowers and gardening, and her undying love of George Strait. She could be very classic and elegant in her church clothes, but then she’d go out and buy rainbow tie-dyed Crocs or paisley pants to wear at home. She was the classic aunt, who spoiled the kids with things their parents probably wouldn’t. In addition to all the desserts, she served us coffee at breakfast when we were little kids (really, milk with just a splash of coffee), and she ordered her niece her first pina colada. She bought us fancy pajamas, and she would play all day with us, if she had the opportunity.
Betty is survived by her sister, Marie Sandefer; her brother and sister-in-law, Ernest Jr. and Carol Jackson; her nieces, Connie Blevins and husband, Floyd, Carol Stanley and husband, Darrell, Patricia Greenway, Shannon Jarrett, and Stacie Jarrett Kortenkamp and husband, David; her nephews, J. W. Sandefer, Jr, Charles Jackson and wife, Shirley, Anthony “Tony” Jarrett and wife, Liz, and Jerry Jackson; her great-nieces, Nicole Swiney and husband, Chase, Gina Jackson Cassidy and husband, Chris, Carla Jackson, Jamie Miles, Rebekah Griffith, Holly Blevins, and Jeannie Sandefer; and her great-nephews, Brandon Griffith and wife, Samantha, and Dillion Blevins and wife, Lindsey.

Her funeral service will be conducted in the chapel of the Knox Funeral Home Monday, February 13 at 11 A.M. with Rev. Tim H. Mills officiating. She will be laid to rest in the Terrell Cemetery.
Betty’s nephews will serve as casket bearers.
Family and friends may visit at the funeral home Monday after 10 A.M. until the funeral hour.
